Presentation

The Pâtisserie Gavet, located on the Quai Leray in Pornic, is one of the town's must-see places that Pornic residents know well.

I was one week old when my parents moved to Pornic.
My childhood is full of memories... My father used to spend his days in the laboratory in front of his big bowl full of chocolate. As a child, I had a pet peeve: to go into the storeroom, open the boxes of chocolates discreetly, and put 2 or 3 in my pocket before leaving for school. My favourite was the Galet Jade! This little green chocolate has a very childish taste: hazelnut paste, with hazelnut praline, not too sweet... It is not crunchy, just melting. Sometimes I would forget them in my pocket!

At Gavet, chocolate is a family affair that has lasted for 5 generations.

One day I will be a master chocolatier
I spent a lot of time with my father in the laboratory since I was a child, and he passed on everything to me from a very young age until he passed the torch to me in 2005. Thanks to this, I had time to learn everything I didn't know yet because I didn't do an apprenticeship. Today, we still work with my father's recipes with ever greater rigour; our customers love them. The title of Master Chocolatier came quite naturally. My father was a Master Chocolatier and when I took over the family business, I wanted to maintain this level of quality in my work and in my products.

Délicat&Sens, my chocolate!
I went to Paris to create my own chocolate. In the mouth, you first discover a hint of acidity, then sweetness, a fruity taste of cocoa and you finish with a long finish. I wanted it to be like a real firework!

  • Le Délicat&Sens... a chocolate with a long finish, both powerful and fruity. This is the unique chocolate created by Bertrand Gavet using cocoa beans from Santo Domingo and Peru.
  • L'Armoricain... their family speciality for 5 generations. L'Armoricain consists of 2 thin layers of meringue, both crisp and melting, with a praline cream in between (gluten-free pastry).
  • Héloïse's spread... with a taste of hazelnuts twisted just right! 
  • Kouign-Amann and gâteau nantais
  • The marshmallow bears... melting chocolate, marshmallow as soft as a cloud, irresistible!
