In his Anne de Bretagne restaurant in La Plaine-sur-Mer, chef Mathieu Guibert offers a moment of pleasure and emotion with his inventive, modern cuisine. A true chef of the sea, he sublimates the flavours of the sea in dishes of rare elegance and intelligence.

Sleek in form, subtle on the palate: a dish composed by Mathieu Guibert is an invitation to discover all the senses, with a menu strongly influenced by local produce.
Iodine remains the main feature of his cuisine, which gives pride of place to fish and seafood from La Plaine sur Mer and the surrounding region. He also makes a point of rigorously selecting the local produce that goes into his dishes. As the son of a farmer himself, he knows the producers around him inside out. This passion for good produce has led him to put together a menu that changes with the seasons and draws on local resources.

It's a cuisine that's both creative and authentic, with a view over the ocean that's hard to ignore.

  • Rigadeaux du Pays de Retz Cuisines with lemon thyme, Milliassiere celery and tapioca, marinière emulsion
  • M.Poupard's green asparagus, just roasted, fricassee of elvers from my region, watercress cream
  • Sole meunière cooked on the bone, with roasted hazelnut chips, generously seasoned cooking juices
  • Pan-fried sea bass with Gravette seaweed, warmed razor clams and braised salsify, shellfish broth with sea urchin tongues
  • Madame Cassard's just-roasted pigeon, iodised samphire and sardine-infused juice
