Tell us how you got to the Anne de Bretagne establishment ?
“I am from Saint Michel Chef Chef. My training and my career have made me travel a lot, but I have never cut ties with my territory. My family, my friends are here, as well as all the links that I have been able to forge by being very involved in community life.
Following the meeting with Philippe Vételé and the visit to the establishment in September 2015, everything seemed obvious and simple to me. This house has a humanity which I like and which will enable me to defend local products and the Pays de Retz ”.
 
The spirit of the territory, respect for producers and local products are values ​​that are close to your heart. What flavors of Destination Pornic are found in your dishes?
 “Here we cook with salt from the salt flats of Millac. It is very good, a real salt of the soil which carries with it the taste and the typicity of the old Breton marshes. It is also a product rich in the passion and love of those who harvest it ... and that is of great value to me.

In our desserts and pastries we find strawberries from the Fraiseraie. From time to time, we like to go pick them ourselves in Pornic during the seasonal pickings. They are also offered in jam for breakfasts.

The Curé Nantais is present on our cheese board for breakfast, but also in my new menu "a stroll in my country of Retz".

From June to September, we cook mussels from La Plaine sur Mer, the flagship product here. Fleshy, strong in taste and well iodized, they have a good texture that we like to work with ".
 
Could you describe to us, for example, one of your mussel dishes?
"Variation of mussels as a starter":
Tomato jelly mold infused with fennel flower
Light cream of mussels with Saffron and Orange
Hot / cold marinière mussel, toast rubbed with garlic butter

We are well aware of the reputation of the cellar that Michèle Vételé was able to build, over 30,000 bottles. Do you ever offer beer to your customers?
" Yes indeed. We have a clientele who like to go for a walk and discover our territory and who may want to enjoy a cold drink on their return. We offer them a single brand of beer: Brigantine de Pornic. A 100% handcrafted, quality beer which maintains a very pleasant balance between bubbles, bitter taste and sweetness ”.
 
You are from Saint Michel Chef Chef, I imagine that Galettes St Michel must evoke gourmet memories ...
“Galettes St Michel are my favorite product. My grandmother used to give it to us when I was little. When I cycled home from school, the smell of butter accompanied me on the way home. I also have some memories of the factory visit, I was really very proud of it ...
We don't offer a dessert with Galettes St Michel, maybe it will come later, but I like to share them and offer them to our customers ".
